Instructions
- Heat Coconut Oil: Warm coconut oil in a pan over medium heat until hot enough for frying.
- Cook Vegan Cold Cuts: Add your preferred amount of vegan cold cuts to the pan and cook until they become slightly browned and crispy, then remove from heat.
- First Fry of Potatoes: In a deep saucepan or deep fryer, heat coconut oil to 375°F (190°C). Carefully add the potatoes and fry for about 3 minutes until soft but not browned. Remove and drain on paper towels, allowing the potatoes to dry completely.
- Second Fry of Potatoes: Reheat the oil to 375°F (190°C) and return the dried potatoes to the oil. Fry them again for 4 to 5 minutes or until they turn golden and crispy. Remove and drain on paper towels.
- Season Fries: Toss the crispy fries with salt and ground black pepper to taste.
- Assemble the Poutine: Place the fries into a dish or shallow bowl. Top them with vegan cheese and vegan scrambled eggs. Drizzle with vegan Hollandaise sauce and sprinkle vegan fa’con on top. Garnish with fresh chives.
