Ingredients
For the Turkey Burgers
- 500g turkey thigh mince
- 2 spring onions, finely chopped
- 85g cheddar cheese, grated
- Salt and pepper, to taste
For the Sweet Potato Chips
- 1kg sweet potatoes, peeled and cut into chips
- 3 tbsp olive oil, divided
- Salt, to taste
To Serve
- 4 soft wholemeal rolls
- ¼ cucumber or 1 small Lebanese cucumber, thinly sliced
- Tomato ketchup, as needed
- Salad, optional
Instructions
- Prepare the burger mixture: Heat the oven to 200°C (180°C fan)/gas mark 6. In a large bowl, combine the turkey thigh mince with the finely chopped spring onions, grated cheddar, salt, and pepper. Mix thoroughly until all ingredients are evenly distributed. Shape the mixture into 4 equal-sized burgers, then chill them in the refrigerator for 15 minutes to help them hold their shape during cooking.
- Cook the sweet potato chips: Place the peeled and cut sweet potato chips on a large non-stick baking tray. Drizzle with 2 tablespoons of olive oil and sprinkle with salt. Toss the chips to ensure they are evenly coated. Bake in the preheated oven for 30 minutes, turning them halfway through the cooking time to achieve even roasting and a crisp exterior.
- Cook the turkey burgers: While the chips bake, heat the remaining 1 tablespoon of olive oil in a large frying pan over medium heat. Add the chilled burgers and cook for approximately 10 minutes, turning once halfway through, until both sides are golden brown and the burgers are cooked thoroughly through to a safe internal temperature.
- Assemble and serve: Split the wholemeal rolls and place a cooked turkey burger inside each. Top with thinly sliced cucumber and a dollop of tomato ketchup. Serve the assembled burgers alongside the oven-roasted sweet potato chips and a fresh salad, if desired, for a complete meal.
