  • 4 roast chicken breasts, sliced
  • 2 red chillies, deseeded and sliced
  • 2 garlic cloves, sliced

For Cooking

  • 2 tbsp olive oil
  • 5 shallots, finely sliced
  • 4 tbsp soy sauce

Instructions

  1. Steam the broccoli: Steam the broccoli florets for 4 minutes until just tender, then transfer them to a large bowl and season to taste.
  2. Cook shallots, chili, and garlic: Heat the olive oil in a pan over medium heat. Add the sliced shallots and fry for 2 minutes. Then add the sliced chillies and garlic, cooking for an additional 4 minutes until softened and fragrant.
  3. Combine ingredients: Remove the cooked shallots, chili, and garlic from the pan using a slotted spoon and add them to the broccoli in the bowl along with the black olives and sliced roast chicken breasts.
  4. Make the dressing: Pour the soy sauce into the hot pan and warm it over medium heat, stirring to loosen any browned bits and blend the flavors.
  5. Dress the salad: Pour the warmed soy sauce dressing over the salad mixture and toss to combine everything evenly.
  6. Serve: Enjoy the salad either warm or cold. Optional: for a more filling meal, add cooked and cooled egg noodles before dressing.
