Shrimp and Toppings

  • 1 pound Frozen Shrimp
  • 3 tablespoons Olive Oil
  • 2 tablespoons Taco Seasoning
  • 1 cup Shredded Cheddar Cheese
  • 2 Tomatoes (diced or sliced)
  • 2 cups Lettuce (shredded)
  • 1 cup Red Cabbage (shredded)
  • 1 bunch Scallions (chopped)
  • 1 cup Guacamole
  • 1/2 cup Salsa
  • 8 Small Flour Tortillas
  • Jalapeño Pepper, to taste (sliced)
  • Lime wedges, to taste
  • Fresh Cilantro Leaves, to taste for garnish

Instructions

  1. Make the Cilantro Lime Sauce: In a food processor or blender, combine sour cream, lime juice from 2 limes, fresh cilantro leaves, garlic cloves, scallions, salt, and black pepper. Blend until smooth and creamy. Pour into a container, cover, and chill until ready to serve.
  2. Prepare the Shrimp: Place frozen shrimp in a rimmed, shallow pan. Drizzle olive oil over the shrimp and toss to coat evenly. Sprinkle taco seasoning over the shrimp, making sure all surfaces are coated. Let the shrimp sit for 5 minutes to absorb the seasoning.
  3. Cook the Shrimp: Transfer the shrimp and any accumulated juices to a large skillet. Cook over medium heat for 3 to 5 minutes, stirring occasionally, until the shrimp are fully heated through and opaque. Remove from heat and keep warm.
