Description

A simple and delicious recipe for sardines on toast featuring tangy grated tomato, flavorful sardines in olive oil, and fresh toppings for a quick and nutritious meal or snack.

Ingredients

Scale

Toast Base

  • 4 medium slices sourdough bread
  • 1 garlic clove, halved

Toppings

  • 12 large ripe tomatoes (120g)
  • 120g-140g sardines in olive oil
  • ½ red onion, finely sliced
  • 8 pitted black olives, halved
  • Handful of parsley, finely chopped

Instructions

  1. Toast the Bread: Toast the sourdough bread slices until golden and crisp to provide a sturdy base for the toppings.
  2. Rub with Garlic: Rub the toasted bread with the cut side of the garlic clove to infuse a subtle garlicky flavor.
  3. Grate the Tomato: Grate the ripe tomato directly over the bread slices and spread the juice and pulp evenly to create a fresh and juicy topping layer.
  4. Add Sardines: Place the sardines in olive oil atop the tomato layer, then drizzle a few tablespoons of the olive oil from the sardine can over each slice for extra richness.
  5. Garnish: Scatter the finely sliced red onion, halved black olives, and chopped parsley evenly over the sardine-topped toast for brightness and added texture.

Notes

  • Use ripe, juicy tomatoes for the best flavor.
  • For a stronger garlic flavor, rub the toast with the garlic clove twice.
  • Optional: add a squeeze of lemon juice or a pinch of black pepper for extra zest.
  • Serve immediately to enjoy the toast crispness.
