Cajun Fries

  • 1 big potato, cut into thin chips

Mayonnaise Spread

  • 1 tsp Dijon mustard

Sandwich Components

  • 3 slices white or brown bread, lightly toasted
  • 2 radishes, thinly sliced
  • 1 baby or ½ avocado, sliced
  • 2 slices salt beef
  • couple Little Gem lettuce leaves

Instructions

  1. Prepare the Cajun Fries: Heat the oven to 200C/180C fan/gas 6. Place the thin-cut potato chips on a non-stick baking tray. Toss them with olive oil and Cajun seasoning until evenly coated. Spread them out in a single layer on the tray. Bake in the oven for 20-25 minutes, turning once halfway through, until they are golden and crisp. Season with salt to taste.
  2. Make the Mayonnaise Spread: While the fries bake, combine the mayonnaise, chopped chives, and Dijon mustard in a small bowl. Mix thoroughly and season with salt and pepper as desired.
  3. Assemble the Sandwich: Spread the mayonnaise mixture onto two slices of the toasted bread. On one spread slice, layer thinly sliced radishes and avocado slices. Place the other mayonnaise-spread slice on top, spread side up. Add the salt beef slices and a few leaves of Little Gem lettuce. Top with the final slice of bread.
  4. Serve: Cut the sandwich into manageable sections, securing each with cocktail sticks if desired. Serve immediately alongside the crispy Cajun fries.
