Instructions
- Step 1: Preheat the oven to 190°C (170°C fan/gas mark 5). In a roasting tin, mix the oil, sundried tomato purée, red wine vinegar, chilli flakes, chopped rosemary, and some seasoning.
- Step 2: Coat the chicken breasts in the tomato mixture, then add the courgette, pepper, cherry tomatoes, and unpeeled garlic cloves to the tin. Toss everything to combine, then place the chicken on top of the vegetables.
- Step 3: Roast for 20–25 minutes until the chicken is cooked through. Remove the chicken and cover loosely with foil to rest.
- Step 4: Return the vegetables to the oven for an additional 15 minutes until softened and slightly charred.
