Ingredients

  • 2 tbsp olive or rapeseed oil
  • 2 tbsp sundried tomato purée
  • 2 tbsp red wine vinegar
  • Pinch of chilli flakes, plus extra to serve (optional)
  • 2 rosemary sprigs, leaves picked and finely chopped
  • 2 chicken breasts (skin-on if possible)
  • 1 courgette, halved lengthways and sliced
  • 1 pepper (any colour), chopped
  • 250g cherry tomatoes, halved
  • 4 garlic cloves, unpeeled
  • 180g wholemeal pasta
  • Parmesan, finely grated, and drizzle of extra virgin olive oil, to serve

Instructions

  1. Step 1: Preheat the oven to 190°C (170°C fan/gas mark 5). In a roasting tin, mix the oil, sundried tomato purée, red wine vinegar, chilli flakes, chopped rosemary, and some seasoning.
  2. Step 2: Coat the chicken breasts in the tomato mixture, then add the courgette, pepper, cherry tomatoes, and unpeeled garlic cloves to the tin. Toss everything to combine, then place the chicken on top of the vegetables.
  3. Step 3: Roast for 20–25 minutes until the chicken is cooked through. Remove the chicken and cover loosely with foil to rest.
  4. Step 4: Return the vegetables to the oven for an additional 15 minutes until softened and slightly charred.
  5. Step 5: Meanwhile, cook the wholemeal pasta according to package instructions. Drain and reserve some pasta water.
  6. Step 6: Remove the roasted vegetables from the oven. Squeeze the softened garlic out of its skin into the tin and mash with a fork. Slightly squash some of the cherry tomatoes and add a splash of pasta cooking water to loosen the sauce. Stir to combine and scrape any caramelized bits from the tin into the sauce.
  7. Step 7: Add the drained pasta to the roasting tin and toss through the sauce. Season to taste.
  8. Step 8: Slice the rested chicken and serve on top of the pasta. Finish each serving with a drizzle of extra virgin olive oil, grated parmesan, and a pinch of chilli flakes if you like.
