  • 100g tinned rhubarb, drained, plus 2 tbsp rhubarb syrup from the tin
  • 2 tbsp caster sugar
  • 1 ball stem ginger, sliced
  • 4 tbsp ASDA Extra Special Non Alcoholic Rhubarb & Ginger Flavour Botanical Drink
  • 1 lime, juiced
  • Chilled nosecco or alcohol-free sparkling wine
  • 4 pieces crystallised ginger
  • 1 tbsp water (for simmering)

Instructions

  1. Step 1: Combine the rhubarb, rhubarb syrup, caster sugar, sliced stem ginger, and 1 tablespoon of water in a small pan. Bring to a gentle simmer, breaking up the rhubarb with the back of a spoon as it heats. Remove from the heat and allow the mixture to infuse for 1 hour.
  2. Step 2: Strain the mixture into a jug, pressing the rhubarb to extract all the juice. Discard the solids and leave the syrup to cool completely. This syrup can be kept chilled for up to two days.
  3. Step 3: To assemble the drinks, pour 1 tablespoon of the prepared rhubarb ginger syrup into the bottom of each of four champagne flutes.
  4. Step 4: Add about 1 teaspoon of lime juice to each glass.
