Instructions

- Mix Eggs and Spinach: In a large bowl, whisk together the eggs, sea salt, and ground black pepper. Stir in the cooled spinach and garlic mixture until combined.
- Fill Muffin Tin: Evenly pour the egg mixture into the prepared muffin liners, filling each about three-quarters full.
- Bake First Stage: Place the muffin tin in the preheated oven and bake for 15 minutes, allowing the eggs to set partially.
- Add Toppings: Remove the muffin tin from the oven and top each egg muffin with a spoonful of marinara sauce, a sprinkle of shredded mozzarella cheese, and one slice of turkey pepperoni.
- Bake Second Stage: Return the muffin tin to the oven and bake for an additional 5 minutes, or until the eggs are fully cooked and the cheese is melted and bubbly.
