Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees F (180 degrees C) and line a 12-cup muffin tin with paper liners to prepare for the egg bites.
  2. Cook Spinach and Garlic: Heat a skillet over medium heat and add the extra-virgin olive oil, frozen spinach, and minced garlic. Cook for about 5 minutes until the spinach is heated through and garlic is fragrant. Remove from heat and let the mixture cool slightly.
  3. Mix Eggs and Spinach: In a large bowl, whisk together the eggs, sea salt, and ground black pepper. Stir in the cooled spinach and garlic mixture until combined.
  4. Fill Muffin Tin: Evenly pour the egg mixture into the prepared muffin liners, filling each about three-quarters full.
  5. Bake First Stage: Place the muffin tin in the preheated oven and bake for 15 minutes, allowing the eggs to set partially.
