Flapjack Mixture
- 125g unsalted butter, plus extra for greasing the tin
- 125g maple syrup
- 125g crunchy peanut butter
- 150g golden caster sugar
- 350g porridge oats
Instructions
- Preheat and Prepare the Tin: Heat your oven to 180°C (160°C fan) or gas mark 4. Grease a 20cm square baking tin with butter, then line it with baking parchment to prevent sticking.
- Melt Butter and Combine Syrup: In a saucepan over low heat, gently melt the butter. Once melted, stir in the maple syrup until combined. Remove the pan from heat and allow the mixture to cool slightly for a few minutes.
- Add Peanut Butter: Stir the crunchy peanut butter into the cooled butter and maple syrup mixture until fully incorporated and smooth.
- Mix Dry Ingredients: In a large mixing bowl, combine the golden caster sugar and porridge oats. Make a well in the center.
- Combine Wet and Dry Ingredients: Pour the peanut butter mixture into the well of the sugar and oats, then mix thoroughly until all the oats are evenly coated and the mixture is uniform.
- Press Into Tin: Transfer the flapjack mixture into the prepared tin, pressing down gently to flatten and even out the surface.
- Bake: Place the tin in the preheated oven and bake for 25 to 30 minutes until the flapjacks are golden brown.
- Cool and Cut: Remove the tin from the oven and leave the flapjacks to cool completely in the tin. Once cooled, lift out the flapjack using the parchment paper and cut into 12 evenly sized pieces.
Notes
- Using crunchy peanut butter adds delightful texture, but smooth peanut butter can be used as a substitute.
- Ensure the flapjacks are completely cool before cutting to prevent crumbling.
- Store flapjacks in an airtight container for up to 5 days or freeze for longer storage.
- If you prefer a less sweet treat, reduce the sugar slightly, but keep in mind this might affect the texture.
- For a gluten-free version, use certified gluten-free oats.
