Potatoes and Seasonings

  • 6 Baby Red Potatoes

Bacon and Cheese

  • 10 slices Bacon
  • 1 cup Grated Parmesan Cheese

Instructions

  1. Cook the Bacon: Preheat your oven to 425°F (220°C). Lay the 10 slices of bacon on a cookie sheet in a single layer. Bake in the oven for about 15 minutes, or until the bacon is brown and crumbly. Once cooked, reserve the bacon grease for later use.
  2. Prepare the Potatoes: On the same baking sheet used for bacon, place the 6 baby red potatoes. Drizzle with olive oil as needed and add a few spoonfuls of the reserved bacon fat. Season the potatoes with coarse salt, ground black pepper, fresh parsley, and garlic to taste. Toss or coat the potatoes thoroughly with the seasonings and fat to ensure even flavor.
  3. Smoke the Potatoes: Place the baking sheet with the coated potatoes onto your smoker set at 300°F (150°C). Smoke the potatoes for 1.5 hours, or until they become fork tender and infused with the smoky flavor.
  4. Garnish and Serve: After smoking, transfer the potatoes to a serving platter. Sprinkle 1 cup of grated Parmesan cheese evenly over the hot potatoes, then top with the crumbled bacon pieces. Serve immediately and enjoy the combination of smoky, garlicky, cheesy flavors.

Notes

  • Using the reserved bacon grease adds a rich, smoky flavor to the potatoes—do not discard it.
