- 1 tablespoon lemon juice

Instructions
- Prepare the Apple Topping: In a medium bowl, combine the diced apples, brown sugar, melted butter, cinnamon, nutmeg, and lemon juice. Toss to coat evenly. Microwave for 2-3 minutes until slightly softened, or sauté in a skillet over medium heat for 5-7 minutes. Set aside to cool.
- Preheat Oven and Prepare Baking Dish: Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish to prevent sticking.
- Mix Dry Ingredients: In a large bowl, whisk together the rolled oats, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt until well combined.
- Mix Wet Ingredients: In a separate bowl, whisk the milk, unsweetened applesauce, maple syrup (or honey), lightly beaten eggs, melted coconut oil (or butter), and vanilla extract until smooth.
- Combine Wet and Dry: Pour the wet ingredient mixture into the bowl with dry ingredients. Stir gently until just combined, being careful not to overmix to keep the texture tender.
- Add Optional Mix-Ins: If using nuts, dried fruit, or shredded coconut, fold them in gently now to distribute evenly throughout the oatmeal base.
- Assemble the Bake: Pour the oatmeal batter into the prepared baking dish, spreading it out evenly with a spatula.
- Add Apple Topping: Spoon the prepared apple topping evenly over the oatmeal base layer, spreading it gently to cover the surface.
- Bake: Place the baking dish in the preheated oven and bake for 30-35 minutes until the top is golden brown and a toothpick inserted into the center comes out clean.
