A quick and easy no-oven pizza recipe that uses a frying pan and grill to create a delicious homemade pizza with a soft, golden crust topped with a flavorful tomato sauce, fresh basil, and melted cheddar cheese.

Dough
- 225g self-raising flour
- 3 tbsp olive oil, plus extra for frying
- 6–7 tbsp warm water (or enough to make a soft dough)
Tomato Sauce
- 1 tsp olive oil
- 1 onion, sliced
- 3 garlic cloves, crushed
- 250g pack cherry tomatoes, halved
- 4 tbsp passata
- Handful fresh basil leaves, chopped
- Salt and pepper, to season
Topping
- 50g cheddar, grated
Instructions
- Prepare the Tomato Sauce: Heat 1 teaspoon of olive oil in a frying pan over medium heat. Add the sliced onion and crushed garlic cloves, cooking for about 5 minutes until softened. Add the halved cherry tomatoes and passata, then simmer for 5-10 minutes or until the tomatoes are soft. Remove from heat, stir in the chopped fresh basil, season with salt and pepper, and allow to cool.
- Make the Dough: Place the self-raising flour in a bowl and make a well in the center. Pour in 3 tablespoons of olive oil and gradually add 6 to 7 tablespoons of warm water, mixing to form a soft dough. Transfer to a lightly floured surface and roll out to fit a 22cm frying pan or divide to make two smaller bases.
- Cook the Base: Heat a glug of olive oil in the frying pan over medium heat. Gently press the rolled dough into the pan and cook for 8-10 minutes until the base is golden and cooked through.
- Add Toppings and Grill: Preheat your grill to hot. Spread the prepared tomato sauce evenly over the pizza base, then scatter the grated cheddar on top. Place under the grill until the cheese has melted and the edges of the base are golden, about 3-5 minutes.
- Serve: Remove the pizza from the grill and serve immediately while hot and fresh.

- If desired, add additional toppings like pepperoni, olives, or bell peppers before grilling.
- Use self-raising flour to help the dough rise slightly without yeast.
- Make sure to cook the base thoroughly in the pan before grilling to ensure a firm crust.
- Adjust seasoning in the tomato sauce to taste.
