- Cook Salmon: Meanwhile, place the salmon fillets in a microwave-safe dish with a splash of water. Cover with cling film and microwave on High for 2½ minutes until the fish easily flakes apart.
- Prepare Pan and Potatoes: Heat the grill to high. In a deep frying pan, heat the olive oil over high heat. Cut the cooked potatoes into chunky slices and quickly fry them until golden on the edges.
- Combine Ingredients: Flake the microwaved salmon into large chunks and distribute them among the potatoes along with the broccoli florets.
- Mix Eggs and Mint: Stir the chopped mint and seasoning into the beaten eggs, then pour the egg mixture evenly over the potato, salmon, and broccoli in the pan.
- Cook Frittata: Allow the frittata to cook over low heat for 6 minutes until the edges are set and the center remains slightly wobbly.
- Finish Under Grill: Transfer the pan under the hot grill briefly to fully set the frittata and brown the top.
- Serve: Slice the frittata into wedges and serve warm, ideally accompanied by a big green salad for a balanced meal.
