These Melting Chilli Bean Wraps are a quick and delicious vegetarian meal featuring spicy mixed beans, fresh cherry tomatoes, and melted mature cheddar cheese wrapped in soft tortillas.   • 410g tin mixed beans in chilli sauce
  • Handful cherry tomatoes, halved
  • 4 tortilla wraps
  • 2 handfuls grated mature cheddar cheese

  • Ready-made guacamole

Instructions

  1. Prepare the bean mixture: Empty the tin of mixed beans in chilli sauce into a pan. Stir in the halved cherry tomatoes and cook over medium heat for 5 minutes to warm through and allow the flavors to combine.
  2. Assemble the wraps: Divide the warm bean and tomato mixture evenly among the four tortilla wraps. Sprinkle a small handful of grated mature cheddar cheese over each filled wrap, then carefully roll them up to enclose the filling.
  3. Grill the wraps: Place the rolled wraps onto a baking sheet. Scatter the remaining handful of grated cheddar cheese over the top of the wraps. Put the baking sheet under a high grill for 2 to 3 minutes until the cheese is melted, golden, and bubbling.
  4. Serve: Remove the wraps from the grill and serve immediately with a side of ready-made guacamole for dipping or spreading.

Notes

  • You can substitute mature cheddar with any cheese that melts well, such as Monterey Jack or mozzarella.
  • For extra heat, add chopped fresh chili or a sprinkle of chili flakes to the bean mixture while cooking.
  • If a grill is unavailable, you can bake the assembled wraps in a preheated oven at 220°C (425°F) for 5–7 minutes until cheese melts and browns.
