Ingredients

  • 100ml natural yogurt
  • 3 tbsp mayonnaise
  • ½ small bunch mint, leaves picked and finely chopped
  • 1 small red onion, finely chopped
  • 1 small red chilli, deseeded and finely chopped
  • ½ cucumber, finely chopped
  • ½ small bunch coriander, finely chopped
  • 1 rotisserie chicken
  • 3 Little Gem lettuces, halved lengthways
  • 4 tbsp mango chutney
  • 4 wholemeal rolls, halved

Instructions

  1. Step 1: In a small bowl, mix together the natural yogurt, mayonnaise, and chopped mint. Season with salt and pepper, then set this mint yogurt sauce aside.
  2. Step 2: In another bowl, combine the finely chopped red onion, deseeded red chilli, cucumber, and coriander to create a fresh salad mix.
  3. Step 3: Carefully slice and shred the rotisserie chicken, removing any bones. Keep the bones for making stock if desired.
  4. Step 4: To assemble the sliders, spread mango chutney on the bottom half of each wholemeal roll. Layer with Little Gem lettuce, shredded chicken, a spoonful of the salad mix, and finish with a dollop of the mint yogurt sauce.
  5. Step 5: Place the top halves of the rolls on, and serve immediately. Any extra chicken can be enjoyed alongside the salad as a light meal.

Tips & Variations

  • Roast your own chicken instead of buying ready-cooked. Simply roast a whole chicken and allow it to cool before shredding for a fresher, more flavorful result. Store any leftovers covered in the fridge for up to two days.

Storage

Store any leftover shredded chicken in an airtight container in the refrigerator for up to two days. Keep the yogurt sauce and salad mix separate to avoid sogginess. Reheat the chicken gently before serving, and assemble the sliders fresh for the best texture.

How to Serve

The image shows a white rectangular plate on a white marbled surface with several layers of food items. The top part of the plate has slices of roasted turkey, with golden brown skin and light pinkish inside. To the right of the turkey, there are three green romaine lettuce leaves placed side by side. Below the turkey and lettuce, there are two white sandwich buns, one open-faced with a layer of turkey slices topped with colorful salsa-like vegetables including diced red onions, green herbs, and tomatoes, and the other closed. To the right side of the plate, there is a white bowl filled with red-orange soup containing small pieces of vegetables. A small white bowl with a creamy white sauce garnished with green herbs is positioned above the turkey on the left side. All items are arranged on a clean white marbled surface.
