Description

This Juicy Garlic Parmesan Chicken meatloaf is a flavorful and moist dish made with ground chicken, Parmesan cheese, fresh garlic, and herbs. Baked to perfection and topped with a rich garlic-Parmesan glaze, it’s a comforting main course perfect for family dinners or meal prepping.

Ingredients

Scale

Meatloaf

  • 2 pounds ground chicken (substitute with ground turkey or lean pork if desired)
  • 1 cup Parmesan cheese, shredded
  • 1 cup panko breadcrumbs
  • 2 large eggs
  • 4 cloves garlic, minced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup whole milk

Garlic-Parmesan Glaze

  • 2 tablespoons unsalted butter
  • 1 clove garlic, minced (optional)
  • 1/4 cup Parmesan cheese, grated
  • 2 tablespoons fresh parsley, chopped (divided)

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or grease a loaf pan to prevent sticking and ease cleanup.
  2. Combine Meatloaf Ingredients: In a large bowl, gently combine the ground chicken, shredded Parmesan, panko breadcrumbs, eggs, minced garlic, garlic powder, onion powder, dried basil, dried parsley, salt, black pepper, and whole milk. Mix until just combined to avoid a dense meatloaf.
  3. Shape and Bake: Shape the mixture into a loaf and place it onto the prepared baking sheet or into the loaf pan. Bake for 40 to 45 minutes, or until the internal temperature reaches 165°F (74°C) and the meatloaf is set.
  4. Prepare Garlic-Parmesan Glaze: While the meatloaf bakes, melt unsalted butter in a small saucepan over medium heat. If desired, add an extra minced garlic clove and sauté until fragrant to enhance the garlic flavor. Stir in grated Parmesan cheese and half of the chopped fresh parsley, cooking until the glaze thickens slightly.
  5. Glaze and Finish Baking: Remove the meatloaf from the oven and brush the garlic-Parmesan glaze over the top. Return to the oven and bake for an additional 5 to 7 minutes until the glaze is golden and bubbly.
  6. Rest and Serve: Allow the meatloaf to rest for 5 minutes to let juices redistribute. Slice, garnish with the remaining fresh parsley, and serve warm.

Notes

  • To ensure a moist meatloaf, avoid overmixing the ingredients.
  • You can substitute ground chicken with lean turkey or pork for variations in flavor and texture.
  • Using a meat thermometer is the best way to check doneness—target 165°F (74°C) internal temperature.
  • Leftovers can be refrigerated for up to 3 days or frozen for up to 2 months.
  • For a gluten-free option, substitute panko breadcrumbs with gluten-free breadcrumbs or oat flour.
