Chicken and Marinade

  • 2 skinless chicken breasts
  • Few thyme sprigs, leaves picked
  • 1 tbsp olive oil
  • 2 tsp jerk seasoning
  • Juice of 1 lime (divided)

Burger Assembly

  • 2 large bread rolls
  • ½ small mango, stoned, peeled and sliced
  • 1 tomato, sliced
  • 1 Little Gem lettuce heart, shredded
  • 2 tbsp mayonnaise and ketchup, to serve (optional)

Instructions

  1. Prepare the chicken: Place the chicken breasts between two pieces of cling film and gently bash them with a rolling pin until flattened to an even thickness, which helps with quick and even cooking.
  2. Marinate the chicken: In a bowl, combine the picked thyme leaves, olive oil, jerk seasoning, and half the lime juice. Add the flattened chicken breasts to this marinade, coating them well, and let them rest for 5 minutes to absorb the flavors.
  3. Cook the chicken: Preheat a griddle pan until very hot. Cook the marinated chicken breasts for 4-5 minutes on each side or until they are thoroughly cooked through and nicely charred.
  4. Toast the buns: While the chicken cooks, slice the bread rolls and toast the cut sides in the griddle pan for 1-2 minutes until lightly crispy and golden.
  5. Assemble the burgers: Place each cooked chicken breast on the toasted buns. Layer with sliced mango, tomato slices, and shredded Little Gem lettuce. Squeeze the remaining lime juice over the top, then optionally spread mayonnaise and ketchup before closing the burgers and serving immediately.

Notes

  • For extra heat, add more jerk seasoning or a dash of hot sauce to the marinade.
  • If mango is unavailable, ripe pineapple slices make an excellent alternative for a tropical twist.
  • The chicken can be prepared a few hours ahead and refrigerated to deepen the marinade flavor.
  • Use gluten-free rolls to make this recipe gluten-free if needed.
  • Griddle pan is recommended for cooking to achieve nice grill marks and smoky flavor, but a regular skillet or outdoor grill can be used as well.
