Burgers

  • 1 tbsp olive oil, plus extra for drizzling
  • 1 red onion, finely chopped
  • 500g lean minced beef or turkey
  • 1 egg
  • 12 cream crackers, bashed to fine crumbs
  • 2 tsp chilli paste
  • 2 tsp garlic paste
  • 1 tsp tomato ketchup
  • 1 tsp brown sauce
  • 2 tbsp plain flour
  • 6 hamburger rolls, toasted, to serve
  • Toppings of your choice (relish, chutney, salad), to serve

Sweet Potato Wedges

  • 4 sweet potatoes, cut into wedges
  • 2 tbsp olive oil
  • 1 tsp paprika

Instructions

  1. Prepare the onion: Heat 1 tbsp olive oil in a frying pan over medium heat and fry the finely chopped red onion for about 5 minutes or until soft. Remove from heat and allow to cool slightly.
  2. Make the burger mixture: Once the onion is cool enough, transfer it to a large bowl along with the minced beef or turkey, egg, finely crushed cream crackers, chilli paste, garlic paste, tomato ketchup, and brown sauce. Mix thoroughly until all ingredients are well combined.
  3. Form burgers: Divide the mixture into 6 equal portions. Shape each into a thick, round patty. Place plain flour on a plate and lightly coat each side of the patties in flour.
  4. Chill the burgers: Transfer the floured burgers to a baking tray. Cover with cling film and refrigerate for at least 2 hours to help set their shape and enhance flavors.
  5. Prepare sweet potato wedges: Preheat the oven to 200°C (180°C fan)/gas mark 6. On a baking tray, lay out the sweet potato wedges. Drizzle with 2 tbsp olive oil and sprinkle with 1 tsp paprika and salt to taste. Toss or shuffle with your hands to ensure even coating.
  6. Start roasting wedges: Place the tray with sweet potato wedges into the preheated oven and roast for 10 minutes.
  7. Cook burgers with wedges: After the wedges have roasted for 10 minutes, drizzle the chilled burgers with a little olive oil and place them on the baking tray alongside the wedges. Continue roasting both for 20-30 minutes more, flipping the burgers halfway through and shaking the wedges occasionally to ensure even cooking and crispiness.
  8. Assemble and serve: Remove burgers and wedges from the oven. Serve the burgers in toasted rolls with your preferred toppings such as relish, chutney, and salad. Accompany with a generous helping of sweet potato wedges on the side.
