Instructions
- Caramelise the Onions: Heat the butter in a large, heavy-based frying pan over medium heat. Add the red onion wedges and cook for 6-8 minutes, turning occasionally until they become golden and caramelised.
- Cook the Brussels Sprouts: Meanwhile, bring a pan of salted water to a boil. Add the Brussels sprouts and cook for 3-4 minutes until just tender. Drain thoroughly once done.
- Glaze the Onions: Stir the demerara sugar and sherry vinegar into the caramelised onions and allow the mixture to bubble for a few seconds to blend the flavors.
- Combine and Serve: Remove the pan from heat and toss the drained Brussels sprouts through the onion mixture until well coated. Serve immediately as a savory, sweet glazed side dish.

- For best results, choose smaller Brussels sprouts as they cook more evenly and quickly.
- If you prefer a vegan version, substitute butter with plant-based margarine.
