Description

Garlic Butter Corn Cheese is a rich and creamy side dish featuring tender corn kernels sautéed in garlic butter, mixed with a blend of cream cheese, mozzarella, Parmesan, and mayonnaise, then baked to bubbly, golden perfection. Perfect as a comforting side or a delicious dip.

Ingredients

Scale

Corn

  • 4 cups fresh corn kernels (about 68 ears of corn) or 2 cans of corn, drained

Butter and Garlic

  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced

Cheese Mixture

  • 1 cup cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup mayonnaise

Seasoning and Garnish

  • 1 teaspoon chili powder (optional, for a kick)
  • Salt and pepper to taste
  • Fresh parsley or cilantro, chopped (for garnish)

Instructions

  1. Prepare the Corn: If using fresh corn, shuck the ears, remove the husks and silk, and rinse under cold water. Cut the kernels off the cob using a sharp knife while holding the ear upright over a bowl to catch them. If using canned corn, simply drain and set aside.
  2. Sauté Garlic and Corn: In a large skillet, melt the unsalted butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant and lightly golden, being careful to avoid burning. Stir in the corn kernels and cook for 5-7 minutes if fresh or 3-4 minutes if canned, until heated through.
  3. Mix Cheese and Seasoning: In a large mixing bowl, combine softened cream cheese, shredded mozzarella, grated Parmesan, and mayonnaise. Add chili powder if using, and season with salt and pepper. Blend the mixture until smooth and creamy.
  4. Combine Corn and Cheese Mixture: Remove the skillet from heat and let the sautéed corn cool slightly for about a minute. Stir the corn into the creamy cheese mixture until fully combined. Taste and adjust seasoning if needed.
  5. Preheat Oven and Prepare Baking Dish: Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish to prevent sticking.
  6. Assemble and Bake: Transfer the combined corn and cheese mixture into the prepared baking dish, smoothing the top with a spatula. For extra cheesiness, sprinkle additional mozzarella and Parmesan on top. Bake for 20-25 minutes until the top is bubbly and golden brown.
  7. Garnish and Serve: Allow the dish to cool for a few minutes after baking. Garnish with freshly chopped parsley or cilantro. Serve warm as a delightful side dish or as a dip for tortilla chips, bread, or fresh vegetables.

Notes

  • Fresh corn yields a sweeter and fresher flavor, but canned corn works well as a convenient alternative.
  • Adjust the chili powder quantity according to your preferred spice level or omit for a milder dish.
  • Softening the cream cheese ahead of time ensures easier mixing and a smoother texture.
  • For a richer flavor, consider adding a splash of heavy cream or a dash of smoked paprika.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
