Sun Dried Tomato Mayonnaise

  • ½ cup mayonnaise (divided)
  • 2 ounces sun dried tomatoes (drained)
  • 2 cloves garlic (or more to taste)

Sandwich Assembly

  • 4 slices sourdough bread (or your favorite bread or use a wrap/tortilla)
  • 6 slices turkey deli meat (divided)
  • 6 slices bacon (cooked)
  • 2 ounces sun dried tomatoes (drained)
  • 1 avocado (divided)
  • 4 leaves romaine lettuce (divided)

Instructions

  1. Make Sun Dried Tomato Mayonnaise: Add the sun dried tomatoes, garlic, and half of the mayonnaise to a wide mouth mason jar or blender. Blend until smooth and well combined to create a flavorful spread.
  2. Prepare the Bread or Wrap: Lay out the four slices of sourdough bread or your chosen wrap on a clean surface. Spread the sun dried tomato mayonnaise evenly on both sides of each slice or on both sides of the wrap.
  3. Layer the Turkey and Bacon: Distribute 3 slices of deli turkey per sandwich evenly over the mayonnaise-coated bread slices. Then, top each sandwich with 3 slices of cooked bacon for a smoky crunch.
  4. Add Sun Dried Tomatoes, Avocado, and Lettuce: Evenly layer the remaining sun dried tomatoes, sliced avocado, and romaine lettuce leaves on top of the bacon for freshness and added flavor.
  5. Assemble and Serve: For sandwiches, place the bread slices together to form the sandwich and cut in half. If using a wrap, tightly roll it up, secure with toothpicks, and cut in half. Serve with a side salad or chips, and enjoy your homemade turkey club!
