- Strain & Cool Purée: Press the cooked raspberry mixture through a fine-mesh sieve into a bowl to remove seeds. Discard the seeds and allow the smooth purée to cool completely to room temperature before proceeding.
- Bloom & Dissolve Gelatin (Optional for firmer texture): Sprinkle 1 tsp unflavored gelatin powder over 2 tbsp cold water in a small microwave-safe bowl. Let it sit for 5-10 minutes to allow the gelatin to bloom. Gently microwave for 10-15 seconds or heat until fully dissolved and clear.
- Combine Gelatin with Purée: Whisk the dissolved gelatin into the cooled raspberry purée until it is thoroughly combined, ensuring the purée is cool before adding gelatin to prevent clumping.
- Whip Cream: In a chilled bowl, whip 1 cup cold heavy whipping cream with 2 tbsp powdered sugar and 1/2 tsp vanilla extract until medium-firm peaks form. Be careful not to over-whip as it can turn grainy.
- Fold Mousse: Gently fold about one-third of the whipped cream into the raspberry and gelatin mixture to lighten it. Then fold in the remaining whipped cream in two additions until no streaks remain. This folding technique keeps the mousse light and airy.
