For the Kofta Burgers
- 1kg lamb mince
- 2 onions, coarsely grated
- 1 garlic bulb, broken into cloves and finely chopped or grated
- 6 tbsp garam masala
- 1 bunch coriander, chopped (optional)
- 1 tbsp chilli sauce, plus extra to serve
- Pinch of salt
To Serve
- 8 pitta breads
- 4 tomatoes, halved and sliced
- Half a red cabbage, shredded
- 1 red onion, sliced (optional)
- Small pot plain yogurt
Instructions
- Prepare the Mixture: Tip the lamb mince into a large bowl along with the grated onions, chopped garlic, garam masala, chopped coriander (if using), chilli sauce, and a good pinch of salt. Use your hands to thoroughly mix and squelch all the ingredients together until evenly combined.
- Shape the Burgers: Pat the mixture into 16 small burger-shaped patties. At this point, you can freeze them for up to 1 month or refrigerate for up to a day ahead to allow the flavors to meld.
- Preheat the Grill: Heat your grill to its highest setting to ensure a quick and even cook with a nice char.
- Cook the Burgers: Place the patties in a single layer on a baking tray. Depending on the size of your tray, you may need to cook them in batches. Grill each side for 5-6 minutes until they are browned and cooked through.
- Prepare the Accompaniments: While the burgers grill, prepare the toppings by slicing tomatoes, shredding cabbage, and slicing red onion if using. Have the pita breads and plain yogurt ready for serving.
- Assemble and Serve: Arrange the cooked burgers on a platter. Serve with warm pita breads, sliced tomatoes, shredded cabbage, red onion slices, and a pot of plain yogurt so everyone can assemble their own kofta burger sandwiches to their liking.
