Turkey and Sauce

  • 2 tbsp sesame oil
  • 500g turkey mince
  • 5cm piece ginger, grated
  • 1 large garlic clove, crushed
  • 3 tbsp honey
  • 3 tbsp soy sauce
  • 1 tbsp hot sriracha chilli sauce

Noodles and Vegetables

  • 350g dried udon noodles
  • 2 limes, juiced, plus wedges to serve (optional)
  • 2 large carrots, peeled and cut into matchsticks
  • 4 spring onions, shredded
  • 1 small bunch coriander, sliced (optional)

Instructions

  1. Heat the oil and cook turkey: Heat 1 tbsp sesame oil in a large non-stick frying pan over high heat until hot. Add the turkey mince and fry for 10-12 minutes until golden brown and crispy, breaking up the meat with a wooden spoon as it cooks.
  2. Add ginger and garlic: Stir in the grated ginger and crushed garlic to the turkey, cooking for an additional 1 minute to release their flavors.
  3. Add sauces and simmer: Pour in the honey, soy sauce, and sriracha chilli sauce. Stir everything well and cook for 2 minutes, allowing the flavors to meld and the sauce to thicken slightly.
  4. Cook noodles: Meanwhile, bring a large pan of water to a boil. Add the dried udon noodles and cook according to the package instructions until tender. Drain the noodles thoroughly.
  5. Toss noodles and lime juice: Return the drained noodles to the pot or a large bowl, add the remaining 1 tbsp sesame oil and all the lime juice, then toss well to evenly coat.
  6. Assemble and serve: Divide the lime-coated noodles between serving bowls. Top each bowl with the crispy chilli turkey mince, carrot matchsticks, shredded spring onions, and sliced coriander. Serve with lime wedges on the side for squeezing over as desired.

  • You can substitute turkey mince with chicken or lean pork mince if preferred.
  • Adjust the amount of sriracha chilli sauce to control the heat level.
