Instructions

  1. Prepare the Chicken: Heat 1 tbsp olive oil in a deep frying pan over medium heat until shimmering. Lightly season the chicken breasts, then place them skin-side down in the pan. Cook for 4-5 minutes until the skin is deeply golden and crisp. Flip the chicken and cook the other side until nearly cooked through, then remove from the pan and set aside on a plate.
  2. Sauté Onion and Garlic: Add the remaining 1 tbsp olive oil to the pan. Add the finely chopped onion and cook for 10 minutes until it starts to soften. Add the grated garlic and cook for an additional 3 minutes, stirring frequently to avoid burning.
  3. Make the Sauce: Stir in the Marmite to combine with the onion and garlic mixture. Pour in the low-salt chicken stock, then add the crème fraîche and grated parmesan. Mix well and bring the sauce to a gentle simmer over medium heat.
  4. Finish Cooking Chicken in Sauce: Return the chicken breasts to the pan, placing them skin-side up in the sauce. Allow to cook gently for 8-10 minutes, or until the chicken is cooked through and the sauce has thickened slightly.
  5. Prepare Vegetables: Cook the microwave vegetables according to the package instructions while the chicken finishes cooking.
  6. Serve: Sprinkle the finely chopped chives over the chicken and sauce. Serve hot with the cooked microwave vegetables and your choice of quinoa or mashed potatoes for a complete meal.
