  • Yield: 4 servings 1x
  • Diet: Vegetarian

Description

Enjoy a warm and comforting one-pan pasta recipe perfect for cozy evenings by the fireplace. This simple dish combines linguine, cherry tomatoes, aromatic garlic and onion, fresh basil, and parmesan, all cooked together in vegetable broth for a flavorful and easy meal with minimal cleanup.

Ingredients

Scale

Pasta and Vegetables

  • 12 oz dried linguine or spaghetti
  • 1 lb ripe cherry tomatoes, halved
  • 1 medium yellow onion, thinly sliced
  • 3 cloves garlic, minced

Liquids and Fats

  • 4 cups vegetable broth
  • 2 tbsp extra-virgin olive oil

Seasonings

  • 1 tsp sea salt, or to taste
  • ½ tsp freshly ground black pepper
  • ¼ tsp chili flakes (optional)

Herbs and Cheese

  • 1 large handful fresh basil leaves, torn, plus extra for garnish
  • ½ cup freshly grated Parmesan or vegetarian hard cheese

Instructions

  1. Combine Ingredients: In a large deep skillet or Dutch oven, combine the pasta, halved cherry tomatoes, thinly sliced onion, minced garlic, olive oil, and vegetable broth.
  2. Season: Add sea salt, freshly ground black pepper, and optional chili flakes to the mixture for balanced seasoning.
  3. Bring to Boil: Set the heat to high and bring the mixture to a boil. Stir regularly to prevent the pasta from sticking to the pan.
  4. Simmer: Reduce heat to medium and let the pasta simmer uncovered. Stir frequently until the pasta is al dente and most of the liquid has been absorbed, about 10 to 12 minutes.
  5. Finish and Combine: Remove the pan from heat, then stir in the torn fresh basil leaves and half of the grated cheese. Mix thoroughly to combine flavors and melt the cheese slightly.
  6. Adjust and Serve: Taste and adjust seasoning if necessary. Serve the pasta hot, garnished with the remaining basil leaves and cheese for a fresh and cheesy finish.

Notes

  • You can use either linguine or spaghetti depending on your preference.
  • For a vegetarian option, use a vegetarian hard cheese instead of Parmesan.
  • Stir frequently during cooking to ensure pasta cooks evenly and doesn’t stick.
  • Adjust chili flakes to your spice preference or omit if you prefer a milder dish.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
