Coconut Mojito Recipe

  • Author: Hailey
  • Total Time: 10 minutes
  • Yield: 1 cocktail 1x

Description

This Coconut Mojito is a refreshing tropical twist on the classic mojito cocktail, combining zesty lime, fresh mint, and creamy coconut flavors with a splash of ginger beer for a fizzy finish. It’s perfect for warm weather or anytime you want a uniquely delicious and vibrant drink.

Ingredients

Scale

Lime Sugar and Glass Rim

  • Zest of 1 lime
  • 2 tablespoons sugar
  • Flaky sea salt, a pinch

Cocktail

  • 1 lime, quartered
  • 8 fresh mint leaves
  • 1 to 2 teaspoons sugar (optional)
  • 1½ ounces (3 tablespoons) white rum
  • ½ ounce (1 tablespoon) coconut rum
  • Dash of pure vanilla extract
  • 2 ounces (1/4 cup) canned coconut cream or cream of coconut
  • Ginger beer, for topping

Instructions

  1. Make the lime sugar: On a shallow plate, combine the lime zest, sugar, and a pinch of flaky sea salt. This mixture will be used to rim the glass and add an extra burst of citrusy sweetness and texture.
  2. Prepare the glass: Rub the rim of a tall glass with a lime wedge, then dip the glass into the lime sugar mixture, pressing gently to adhere. Fill the glass with ice to chill it and prepare for the cocktail.
  3. Muddle the cocktail ingredients: In a cocktail shaker, combine 2 lime wedges, the fresh mint leaves, and sugar if using. Use a muddler or the back of a spoon to gently crush the ingredients, releasing their juicy flavors and aromatic oils.
  4. Add the spirits and vanilla: Pour in the white rum, coconut rum, and add a dash of pure vanilla extract to the shaker. Fill the shaker with ice, then shake vigorously for about 30 seconds until well combined and chilled.
  5. Incorporate coconut cream: Add the canned coconut cream or cream of coconut to the shaker and shake again for another 30 seconds. This step blends the creamy coconut flavor smoothly into the cocktail base.
  6. Strain and top: Strain the mixture into the prepared glass filled with ice. Top off the cocktail with ginger beer, then gently stir to mix the ingredients without losing fizz.
  7. Garnish and serve: Garnish the drink with a fresh mint sprig and a light sprinkle of the remaining lime sugar on top of the drink or rim to enhance aroma and presentation. Serve immediately and enjoy!

Notes

  • Muddling gently is key to releasing flavors without tearing the mint leaves, which can cause bitterness.
  • If you prefer a less sweet cocktail, adjust the sugar quantities or omit the optional sugar in the shaker.
  • Use good quality fresh lime and mint for optimal flavor.
  • Canned coconut cream or cream of coconut can vary in sweetness; choose based on your taste preference.
  • Ginger beer adds a spicy, bubbly finish—avoid ginger ale as it is less flavorful.
  • This cocktail is best served immediately after preparation for the freshest taste and fizz.
