Base Ingredients
- 100g butter, cut into cubes, plus extra for the tin
- 250g Christmas biscuits, such as shortbread or chocolate biscuits
- 75g shelled nuts (use up a bag of whole nuts, or bits and bobs from the baking cupboard)
- 100g mixed dried fruit (such as raisins, cherries or glacé ginger)
- 75g Christmas sweets (candy canes, marshmallows or jelly sweets)
Chocolate Coating
- 400g milk or plain chocolate (or a mixture of both), chopped
- 140g golden syrup (weigh this straight into the pan you will use for melting)
Decoration
- 2 tbsp sprinkles, or more sweets, to decorate
Instructions
- Prepare the Tin and Ingredients: Butter and line a 20cm square tin, or use a 20cm square silicone mould. Break the biscuits into pieces no smaller than a pea but not too chunky to help the rocky road hold together.
- Combine Mix-ins: Halve any larger nuts by snapping or cutting them, then combine with the biscuit pieces. Halve any large dried fruit pieces and chop or snap the Christmas sweets into smaller pieces. Add all these to a mixing bowl.
- Melt Chocolate Mixture: In a pan over low heat, melt 300g of the chopped chocolate together with the butter and golden syrup, stirring occasionally until smooth and fully combined.
- Mix Chocolate with Ingredients: Pour the melted chocolate mixture over the biscuit, nut, and sweet mixture. Stir well to ensure all pieces are fully coated in chocolate.
- Set in Tin: Tip the combined mixture into the prepared tin and level the top; it doesn’t need to be completely smooth.
- Decorate: Melt the remaining 100g of chocolate separately either in short bursts in the microwave or over a simmering water bath. Drizzle this melted chocolate over the top of the rocky road and sprinkle with the chosen decorations like sprinkles or extra sweets.
- Chill and Set: Place the tin in the fridge and chill for at least 3 hours or preferably overnight to allow the rocky road to set firmly.
- Serve: Once set, cut into squares and serve chilled. Store leftovers in the fridge for 3-4 days.
