Description
A festive and hearty Christmas leftover sandwich made by hollowing out a crusty white loaf and layering it with classic holiday leftovers such as turkey, pigs in blankets, stuffing, cranberry sauce, spinach, crispy onions, and a tangy mayo-mustard spread. Perfect for using up leftovers while creating a delicious, shareable sandwich that’s ideal for casual holiday gatherings or next-day treats.

- 400g white round crusty loaf
Spread
- 2 tbsp mayonnaise
- 2 tsp English mustard
Fillings
- 3–4 tbsp cranberry sauce
- handful of baby spinach
- 3–4 tbsp crispy onions
- 250g leftover roast turkey
- 6 leftover cooked pigs in blankets, halved lengthways
- 150g leftover cooked stuffing
Instructions
- Prepare the bread: Slice approximately a 3cm thick lid off the top of the crusty white loaf. Carefully scoop out most of the bread from both the loaf and the lid, leaving about a 1cm layer of bread intact to form a shell. Save the scooped-out bread for croutons or another recipe.
- Make the spread: Combine the mayonnaise and English mustard in a small bowl until smooth. Spread 2 tablespoons of this mixture evenly inside the hollowed-out base of the loaf and 1 tablespoon inside the lid.
- Add cranberry and spinach to the lid: Spoon most of the cranberry sauce into the inside of the lid, then add half the baby spinach on top of the sauce. Sprinkle the crispy onions over the spinach, followed by half of the leftover roast turkey.
- Layer the base: Inside the hollowed loaf base, arrange the remaining turkey evenly. Spoon over the rest of the cranberry sauce, then add the pigs in blankets, halved lengthways. Follow by spreading the leftover stuffing, and lastly add the remaining baby spinach.
- Assemble and chill: Replace the stuffed lid on top of the loaf and press down lightly to compact the fillings. Wrap the entire loaf tightly in cling film or foil and chill in the refrigerator for at least 3 hours to allow flavors to meld and for easier slicing.
- Serve: Remove from the fridge, unwrap carefully, and slice into four to six wedges using a sharp serrated knife. Serve chilled or at room temperature as a festive, flavorful sandwich.
