Christmas Leftover Turkey and Pigs in Blankets Sandwich Recipe
Introduction
This Christmas leftover sandwich is a delicious way to transform your festive leftovers into a satisfying meal. Packed with turkey, stuffing, pigs in blankets, and all the classic flavors, it’s perfect for a cozy lunch or light dinner.

Ingredients
- 400g white round crusty loaf
- 2 tbsp mayonnaise
- 2 tsp English mustard
- 3-4 tbsp cranberry sauce
- Handful of baby spinach
- 3-4 tbsp crispy onions
- 250g leftover roast turkey
- 6 leftover cooked pigs in blankets, halved lengthways
- 150g leftover cooked stuffing
Instructions
- Step 1: Slice a roughly 3cm thick lid off the top of the loaf. Carefully scoop out most of the bread from both the loaf base and the lid, leaving about a 1cm thick layer all around. Save the scooped-out bread for another use, such as croutons.
- Step 2: In a small bowl, combine the mayonnaise and English mustard. Spread 2 tablespoons of this mixture inside the hollowed loaf and 1 tablespoon inside the lid.
- Step 3: Spoon most of the cranberry sauce into the lid and layer half of the baby spinach, crispy onions, and turkey over it.
- Step 4: In the base of the loaf, arrange the remaining turkey, then spread the rest of the cranberry sauce over it. Add the halved pigs in blankets, stuffing, and remaining spinach in layers.
- Step 5: Place the stuffed lid back on the loaf, press down lightly to compact the fillings, then wrap the entire loaf tightly in cling film or foil. Chill in the fridge for at least 3 hours to allow flavors to meld.
- Step 6: When ready to serve, slice the loaf into four or six wedges and enjoy your festive sandwich.
Tips & Variations
- For extra crunch, toast the hollowed loaf lightly before assembling your sandwich.
- Swap baby spinach for watercress or rocket for a peppery bite.
- Add a layer of cheese, such as mature cheddar, for extra richness.
- If you prefer, use leftover ham or roast beef instead of turkey.
Storage
Store the wrapped sandwich in the refrigerator for up to 24 hours. It’s best enjoyed chilled but can be served at room temperature. Avoid freezing as the bread and fillings may become soggy when thawed.

Ingredients
Bread
- 400g white round crusty loaf
Spread
- 2 tbsp mayonnaise
- 2 tsp English mustard
Fillings
- 3–4 tbsp cranberry sauce
- handful of baby spinach
- 3–4 tbsp crispy onions
- 250g leftover roast turkey
- 6 leftover cooked pigs in blankets, halved lengthways
- 150g leftover cooked stuffing
Instructions
- Prepare the bread: Slice approximately a 3cm thick lid off the top of the crusty white loaf. Carefully scoop out most of the bread from both the loaf and the lid, leaving about a 1cm layer of bread intact to form a shell. Save the scooped-out bread for croutons or another recipe.
- Make the spread: Combine the mayonnaise and English mustard in a small bowl until smooth. Spread 2 tablespoons of this mixture evenly inside the hollowed-out base of the loaf and 1 tablespoon inside the lid.
- Add cranberry and spinach to the lid: Spoon most of the cranberry sauce into the inside of the lid, then add half the baby spinach on top of the sauce. Sprinkle the crispy onions over the spinach, followed by half of the leftover roast turkey.
- Layer the base: Inside the hollowed loaf base, arrange the remaining turkey evenly. Spoon over the rest of the cranberry sauce, then add the pigs in blankets, halved lengthways. Follow by spreading the leftover stuffing, and lastly add the remaining baby spinach.
- Assemble and chill: Replace the stuffed lid on top of the loaf and press down lightly to compact the fillings. Wrap the entire loaf tightly in cling film or foil and chill in the refrigerator for at least 3 hours to allow flavors to meld and for easier slicing.
- Serve: Remove from the fridge, unwrap carefully, and slice into four to six wedges using a sharp serrated knife. Serve chilled or at room temperature as a festive, flavorful sandwich.
