These spicy chilli chicken wraps are a flavorful and satisfying meal featuring tender chicken thighs cooked with aromatic spices, fresh ginger, garlic, and tangy tomato purée, all wrapped up in warm roti with mango chutney, fresh herbs, and creamy yogurt. Chicken and Spice Mixture
- 2 tbsp vegetable oil
- 6 boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 large onion, thinly sliced into half-moons
- 2 garlic cloves, finely chopped
- 3cm piece ginger, peeled and finely chopped
- ½ tsp ground cumin
- ½ tsp garam masala
- 1 tbsp tomato purée
- 1 red chilli, thinly sliced into rings
- Juice of ½ lemon
- Salt, to taste
Wrap Assembly
- 4 roti, warmed
- ½ small red onion, chopped
- 4 tbsp mango chutney or lime pickle
- 4 handfuls mint or coriander leaves
- 4 tbsp yogurt
Instructions
- Heat the oil: Place a large frying pan over medium heat and add the vegetable oil. Allow it to warm up before adding any ingredients to ensure proper cooking.
- Cook the chicken: Add the bite-sized chicken thighs to the pan and brown them evenly on all sides. Once browned, remove the chicken from the pan and set aside.
- Saute aromatics: In the same pan, add the sliced onion, finely chopped garlic, ginger, and a pinch of salt. Cook over medium heat for about 5 minutes until the onion softens and becomes translucent.
- Add spices and chicken back: Turn the heat up to high, then return the browned chicken to the pan. Stir in ground cumin, garam masala, tomato purée, sliced red chilli, and lemon juice. Mix well to combine all the flavors evenly.
- Simmer until cooked: Season the mixture well with salt and cook for 10 minutes on high heat, stirring occasionally, until the chicken is fully cooked and tender.
- Assemble the wraps: Warm the roti breads separately. Then evenly distribute the cooked chicken mixture onto each roti. Top with chopped red onion, mango chutney or lime pickle, fresh mint or coriander leaves, and a spoonful of yogurt.
- Serve: Roll up each roti to form a wrap and serve immediately with plenty of napkins to enjoy the delicious, saucy filling.
Notes
- For extra heat, add more chopped red chilli or sprinkle with chili flakes.
- You can substitute chicken thighs with chicken breast for a leaner option, though thighs will be juicier.
- Warm the roti before assembling for a more pliable wrap and better flavor.
- Serve with a side salad or grilled vegetables for a complete meal.
- Mint and coriander can be used interchangeably depending on your preference.
