These Chickpea & Coriander Burgers are a delicious and wholesome vegetarian alternative to traditional meat burgers. Packed with chickpeas, fresh coriander, and a blend of spices, these burgers are perfect for a nutritious lunch or dinner. For the Burgers
- 400g can chickpeas, drained
- Zest of 1 lemon
- Juice of ½ lemon
- 1 tsp ground cumin
- Small bunch coriander, chopped (divided)
- 1 egg
- 100g fresh breadcrumbs (divided)
- 1 medium red onion, ½ diced, ½ sliced
- 1 tbsp olive oil
To Serve
- 4 small wholemeal buns
- 1 large tomato, sliced
- ½ cucumber, sliced
- Chilli sauce
- Remaining chopped coriander
Instructions
- Prepare the Burger Mixture: In a food processor, combine the drained chickpeas, lemon zest, lemon juice, ground cumin, half of the chopped coriander, the egg, and some salt and pepper. Whizz until smooth but still slightly chunky. Transfer the mixture to a bowl and mix in 80g of the fresh breadcrumbs and the diced half of the red onion. This will help bind the mixture together.
- Form and Chill the Burgers: Shape the mixture into 4 evenly sized burger patties. Press the remaining breadcrumbs onto both sides of each burger to create a light coating. Place the burgers in the refrigerator and chill for at least 10 minutes to firm up and hold their shape during cooking.
- Cook the Burgers: Heat the olive oil in a frying pan over medium heat until hot. Add the burgers and fry for 4 minutes on each side, ensuring the heat stays moderate to prevent burning. This will cook the burgers through and create a golden crust.
- Assemble and Serve: Slice each wholemeal bun in half. Layer the bottom half with a tomato slice, a cooked chickpea burger, some slices of red onion and cucumber, a dollop of chilli sauce, and sprinkle with the remaining chopped coriander. Top with the bun lid and serve immediately for a fresh, flavorful meal.
Notes
- For a vegan option, substitute the egg with a flax egg or another egg replacer.
- Adjust the amount of chilli sauce according to your preferred spice level.
- These burgers can be prepared in advance and cooked just before serving.
- Using fresh breadcrumbs helps bind the mixture better, but you can use store-bought if unavailable.
- To enhance the burgers’ flavor, you can add garlic or chili flakes to the mixture if desired.
