Delicious and healthy Chicken Masala Skewers marinated in a flavorful blend of Greek yogurt, masala paste, lime, and fresh coriander, grilled to perfection and served with a refreshing cucumber and cherry tomato salad alongside warm wholemeal chapatis. A quick and vibrant meal perfect for a light lunch or dinner.

Marinade and Chicken
- 150ml 0% fat Greek yogurt
- 2 tbsp masala paste
- Handful of coriander leaves, chopped, plus extra leaves to serve
- Juice and zest of 1 lime, plus lime wedges to serve
- 4 skinless, boneless chicken breasts, each cut into 6 chunks
Salad
- 250g pack cherry tomatoes, hulled or quartered
- 1 red onion, finely chopped
- 1 cucumber, cut into chunks
To Serve
- Wholemeal chapatis, warmed
Instructions
- Prepare the Marinade: In a large bowl, combine the Greek yogurt, masala paste, half of the chopped coriander, half of the lime juice, and all the lime zest. Mix well to create a smooth marinade.
- Marinate Chicken: Add the chicken chunks to the marinade and stir thoroughly to coat all pieces. Cover and refrigerate for at least 30 minutes to let the flavors infuse.
- Thread the Skewers: Thread the marinated chicken pieces evenly onto 8 skewers, ensuring they are secure and evenly spaced for even cooking.
- Cook the Skewers: Heat a griddle pan, frying pan, or barbecue to medium-high heat. Cook the skewers in batches for about 10–12 minutes, turning regularly until the chicken is fully cooked and slightly charred on the edges.
- Prepare the Salad: While the chicken cooks, mix the cherry tomatoes, red onion, cucumber, remaining lime juice, remaining chopped coriander, and season with salt and pepper to taste.
- Serve: Serve the hot chicken skewers alongside the fresh salad and warmed wholemeal chapatis. Garnish with extra coriander leaves and lime wedges for added freshness and flavor.
Notes
- For additional vegetables and to increase the fiber and nutrient content, add chunks of courgette, bell pepper, or onion wedges to the skewers before grilling.
- Ensure chicken is cooked through by checking that juices run clear and internal temperature reaches 165°F (74°C).
- Use wooden skewers soaked in water for at least 30 minutes before threading to prevent burning, if using on a barbecue.
- This recipe can be made gluten-free by substituting chapatis with gluten-free flatbreads or serving without.
