Flatbreads

  • 300g plain flour, plus extra for dusting
  • 1 tsp nigella seeds
  • 1 tsp chilli powder
  • 2 tbsp olive oil, plus extra for frying
  • 30g unsalted butter, melted

Chicken Kebabs

  • 1 onion, grated
  • 1kg chicken mince
  • 5 garlic cloves, crushed
  • 1 green chilli, deseeded and finely chopped
  • 1 tbsp cumin seeds
  • 1 tbsp ground coriander
  • 1 tsp chilli flakes
  • 1 tbsp sumac
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp ground black pepper

Salad

  • 200g red cabbage, finely sliced
  • 2 tbsp white wine vinegar
  • 1/4 cucumber, finely sliced
  • 1 Little Gem lettuce, shredded
  • 3 beef tomatoes, sliced
  • 1 red onion, sliced
  • Small handful of parsley
  • 1 lemon, juiced

Yogurt Dressing

  • 250g Greek yogurt
  • 1 lemon, juiced
  • 1 tsp sumac

Instructions

  1. Prepare the Chicken Kebabs: Begin by squeezing out excess liquid from the grated onion using a clean tea towel. In a large bowl, combine the grated onion, chicken mince, crushed garlic, chopped green chilli, cumin seeds, ground coriander, chilli flakes, sumac, olive oil, salt, and black pepper. Mix thoroughly until the mixture feels sticky. Divide the mixture into four equal portions, wet your hands slightly, shape each portion into a log, and thread each onto a large metal skewer. Cover and refrigerate until ready to cook.
  2. Make the Salad: Add the finely sliced red cabbage to a small bowl with white wine vinegar and season with salt and pepper. In a larger serving bowl, combine the cabbage, sliced cucumber, shredded Little Gem lettuce, sliced tomatoes, sliced red onion, parsley, and lemon juice. Toss well and season to taste.
  3. Prepare the Yogurt Dressing: In a small bowl, mix Greek yogurt with lemon juice and sumac. Season with a pinch of salt and pepper, then set aside until ready to serve.
  4. Make the Flatbreads: In a large bowl, combine plain flour, nigella seeds, chilli powder, and a pinch of salt. Add olive oil and 150ml warm water. Mix to form a dough, then transfer to a lightly floured surface and knead for 5 minutes until smooth and non-sticky. Divide the dough into 4 balls. Roll each into a thin circle about 18cm wide.
  5. Cook the Flatbreads: Heat a large frying pan over medium-high heat. Brush the pan with a little olive oil. Cook one flatbread at a time for 2-3 minutes on each side, until speckled with brown spots. Remove and place on a baking tray, brushing one side with melted butter. Repeat with remaining flatbreads. Keep warm in a low oven.
  6. Cook the Chicken Kebabs: Preheat the grill to medium-high. Line a large baking tray with foil and place the chicken skewers on it. Drizzle with olive oil and grill for 20-25 minutes, turning occasionally, until the chicken is cooked through and an internal temperature of 70°C (160°F) is reached.
  7. Serve: Serve the grilled chicken kebabs with warm flatbreads, fresh salad, and the yogurt dressing. Let everyone build their own wraps.

Notes

  • To ensure tender kebabs, make sure to squeeze out as much water as possible from the grated onion.
  • If you do not have metal skewers, wooden skewers soaked in water for 30 minutes can be used.
  • Adjust the chilli and chilli flakes according to your heat preference.
  • The flatbreads can be kept warm in a low oven while cooking the remaining breads and chicken.
  • Using a meat thermometer ensures perfectly cooked chicken without overcooking.
  • Sumac adds a tangy flavor; if unavailable, a squeeze of lemon can be a substitute in the kebabs and dressing.
