Dressing

  • Juice of 2 lemons
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Salad

  • 1 Cos lettuce, chopped
  • 2 tomatoes, chopped into chunks
  • Small pack flat-leaf parsley, chopped
  • ½ cucumber, chopped into chunks
  • 200g cooked chicken pieces (or leftover cooked chicken)
  • 2 spring onions, sliced

To Serve

  • 2 pitta breads
  • 12 tsp ground sumac

Instructions

  1. Prepare the dressing: Pour the juice of 2 lemons into a large bowl and whisk while slowly drizzling in 2 tablespoons of olive oil. Continue whisking until the mixture thickens slightly, then season with salt and pepper to taste.
  2. Combine the salad ingredients: Add the chopped Cos lettuce, tomato chunks, chopped parsley, cucumber chunks, cooked chicken pieces, and sliced spring onions into the bowl with the dressing. Stir well to ensure all the ingredients are evenly coated.
  3. Toast the pitta breads: Place the pitta breads in a toaster and toast them until they are crisp and golden brown. Once toasted, chop them into bite-sized chunks.
  4. Assemble and serve: Scatter the toasted pitta chunks over the salad, then sprinkle the ground sumac on top. Serve the Chicken Fattoush immediately to retain the freshness and crunch of the ingredients.

Notes

  • Use leftover roasted or grilled chicken for best flavor and convenience.
  • Sumac adds a lemony tartness; if unavailable, a squeeze of lemon can be a substitute.
  • For extra crunch, you can drizzle some olive oil over the toasted pitta pieces before adding them to the salad.
