Dip Base

  • 8 oz. cream cheese (cut into cubes)
  • 1 cup Frank’s buffalo sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ¾ cup Blue Cheese Dressing (or Ranch dressing)

  • ½ cup mozzarella cheese

Instructions

  1. Prep Work: Preheat the oven to 375°F (190°C). Remove the cream cheese from the fridge and cut it into cubes to allow it to soften for 20 to 30 minutes for easier mixing.
  2. Cook the Chicken: Place the chicken breasts in a pot and cover with cool water by about two inches. Optionally, add 1 chicken bouillon cube to infuse extra flavor. Bring to a gentle boil and cook for 15 to 20 minutes until fully cooked but not tough. Avoid rapid boiling to prevent dryness. Drain and shred the chicken using two forks; set aside.
  3. Make the Sauce: In a skillet or saucepan over medium heat, combine buffalo sauce, garlic powder, and onion powder. Using a cast iron skillet is recommended for easy oven transfer. Add the softened cream cheese cubes and blue cheese dressing, stirring continuously until the mixture is smooth and well combined.
  4. Add Cheddar and Chicken: Reduce heat to low and stir in half of the cheddar cheese (1 cup) until melted and smooth. Fold in the shredded chicken, tossing it to coat thoroughly. Remove from heat. If needed, transfer the mixture to a lightly greased 10-inch oven-safe dish.
  5. Top with Remaining Cheese: Sprinkle the remaining 1 cup cheddar cheese and ½ cup mozzarella evenly over the top of the dip.
  6. Bake: Place the dish in the preheated oven and bake uncovered for 15 minutes until the cheese topping is melted and bubbly but not browned, preserving a creamy texture.
  7. Garnish: Remove from oven and garnish with chopped green onions or chives. For an extra touch, you can add small swirls of blue cheese dressing on top right before serving.
  8. Serve: Serve warm with tortilla chips, celery sticks, carrot sticks, or slices of crusty French bread for dipping.
