Brie and Apple Fig Grilled Cheese Sandwich Recipe

  • Author: Hailey
  • Total Time: 25 minutes
  • Yield: 1 sandwich (serves 1-2) 1x

Description

This Brie Grilled Cheese Sandwich is a gourmet twist on a classic favorite, combining creamy Brie, tangy fig preserves, garlic and herb spreadable cheese, and crisp Granny Smith apple slices, all grilled to golden perfection. The balance of savory, sweet, and tart flavors with a buttery, crispy exterior makes it an irresistible comfort food that’s easy to prepare.

Ingredients

Scale

Bread and Spreads

  • 2 slices thick cut bread
  • 2 Tbsp garlic and herbs spreadable cheese (Boursin), softened
  • 2 Tbsp fig preserves

Cheese and Fruit

  • 3 oz Brie cheese, sliced into 4 pieces
  • 6 thin slices of Granny Smith apple

Butter

  • 1 Tbsp butter, softened

Instructions

  1. Spread the cheeses and fig preserves: Onto one side of one bread slice, evenly spread the garlic and herb cheese. On the opposite bread slice, spread the fig preserves on one side.
  2. Assemble the sandwich: Layer 2 slices of Brie over the garlic herb cheese. Arrange the Granny Smith apple slices in a single, non-overlapping layer atop the Brie. Place the remaining 2 Brie slices on top of the apples. Carefully invert the fig preserves bread slice onto the Brie side, fig-side down, forming the sandwich.
  3. Butter the bread exterior: Evenly divide and spread the softened butter on the outer surfaces of both bread slices to ensure golden crispness during cooking.
  4. Start grilling on the skillet: Preheat a medium skillet over medium heat. Place the sandwich in the skillet and cook until the underside is golden brown, about 3-4 minutes.
  5. Flip and lower heat: Flip the sandwich and immediately reduce the heat to low. Cook the other side until brown and toasty, about 4-5 minutes.
  6. Finish melting the Brie: Maintain the low heat to avoid burning. Continue cooking, flipping the sandwich every minute or two, for an additional 5-6 minutes until the Brie is thoroughly melted and the sandwich is evenly warmed through.
  7. Serve: Transfer the finished sandwich to a cutting board. Cut in half and serve immediately while warm and gooey.

Notes

  • Use thick-cut bread for a sturdy sandwich that holds the fillings well.
  • Softened butter spreads more evenly and promotes a crisp, golden crust.
  • Cooking on low heat after flipping ensures the cheese melts without burning the bread.
  • You can substitute Granny Smith apples with any crisp green apple variety for tartness.
  • For extra flavor, add a sprinkle of fresh thyme or rosemary inside the sandwich before grilling.
