Scale
Marinade Ingredients
- 4cm (1 ½ in) piece of ginger, peeled
- 4 tbsp soy sauce
- 4 tbsp mirin
- 3 garlic cloves
- 2 tbsp chopped pineapple
- 2 tsp red chilli flakes or Korean chilli powder
- 3 tbsp golden caster sugar
- 3 tsp sesame oil (divided, 1 tsp for marinade, 2 tsp for cooking)
Main Ingredients
- 500g sirloin or rump steak, trimmed of fat and sliced thinly
- 1 large onion, cut into half moons
- 1 tbsp toasted sesame seeds
- 200g cooked basmati rice
- Chopped spring onions, to serve
Instructions
- Prepare the Marinade: Place the ginger, soy sauce, mirin, garlic, chopped pineapple, red chilli flakes, golden caster sugar, and 1 tsp of sesame oil into a food processor. Blend the ingredients until you achieve a fine, well-combined marinade.
- Marinate the Beef: Pour the marinade into a bowl and add the sliced beef. Stir well to ensure the meat is evenly coated. Leave the beef to marinate at room temperature while you prepare the onions.
- Cook the Onions: Heat the remaining 2 tsp of sesame oil in a large wok or frying pan over high heat until very hot. Add the sliced onion and stir-fry for a few minutes until slightly softened and fragrant.
- Stir-Fry the Beef: Add the marinated beef and all the marinade liquid to the wok with the onions. Stir constantly for approximately 5 minutes or until the beef is cooked through and tender.
- Finish and Serve: Sprinkle the stir-fry with toasted sesame seeds. Serve immediately over cooked basmati rice and garnish with chopped spring onions for freshness and color.
Notes
- For more heat, add extra Korean chilli powder or fresh sliced chilli peppers.
- Feel free to substitute sirloin with ribeye or flank steak for different textures.
- Marinate the beef for longer (up to 30 minutes) for deeper flavor.
- Use a hot wok or pan to get a nice sear on the beef for the best taste.
- Cooked rice can be prepared ahead of time to make this a quick weeknight meal.
