Instructions

  1. Prep the Ingredients: Finely chop the cilantro, parsley, and green onions or chives. Also finely chop the shallot and grate the garlic cloves. Roughly chop the capers and zest and juice the lemon, setting these aside for the sauce.
  2. Combine in a Bowl: In a mixing bowl, add all the chopped herbs, shallot, grated garlic, and chopped capers. Pour in the caper brine along with the lemon zest and juice. Start by adding juice from half a lemon and adjust later to your preferred tanginess.
  3. Season and Add Olive Oil: Add the sea salt to the bowl, then slowly pour in the olive oil starting with ¼ cup. Mix everything thoroughly. Taste the sauce and decide if you want to add more lemon juice, salt, or olive oil to achieve your desired balance and consistency. The sauce should be fresh and slightly runny.
  4. Let Flavors Meld: Cover and refrigerate the chimichurri sauce for about an hour before serving. This resting time allows the flavors to blend and mature beautifully.
