Filling

  • 2 Apples, peeled and cut into bite-size pieces
  • 7 tablespoons Dark Brown Sugar
  • 1 teaspoon Ground Cinnamon
  • 2 pinches Salt
  • 1 1/2 teaspoons Lemon juice (from 1 Lemon)

Assembly and Baking

  • All-Purpose Flour, to dust (to taste)
  • 1 Egg
  • 1 teaspoon Water

Glaze

  • 3/4 cup Powdered Confectioners Sugar, sifted
  • 2 tablespoons reserved apple cinnamon filling juices
  • 2 teaspoons Lemon Juice
  • 2 teaspoons Milk

Instructions

  1. Prepare the dough: In a large mixing bowl, combine 2 cups all-purpose flour, 1 tablespoon granulated sugar, 1 1/2 teaspoons ground cinnamon, and 1 teaspoon salt. Using your fingers, cut in 1 cup cold butter until mixture resembles pea-sized crumbs.
  2. Add wet ingredients: Whisk together 2 eggs and 1/4 cup milk. Pour into the flour-butter mixture and mix until just combined. Divide dough into two equal portions, wrap tightly in plastic wrap, and chill in the refrigerator for 1 hour.
  3. Prepare the apple filling: Peel and chop 2 apples into bite-size pieces. In a frying pan, combine apples, 7 tablespoons dark brown sugar, 1 teaspoon ground cinnamon, 2 pinches salt, and 1 1/2 teaspoons fresh lemon juice. Cook over medium heat, stirring until apples begin to soften and sugar dissolves, about 5-7 minutes. Remove from heat and strain the juices from the apples, reserving both juice and softened apples. Allow both to cool.
  4. Preheat oven and prepare baking sheet: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper and dust a clean work surface with flour.
  5. Roll out the dough: Roll out one portion of dough into a 12×10-inch rectangle. Cut the dough into six rectangles approximately 3 1/2 by 4 1/2 inches. Repeat with the second portion.
  6. Assemble pop tarts: Whisk 1 egg with 1 teaspoon water to create an egg wash. Brush a thin coat over each dough rectangle. Spoon about 1 heaping tablespoon of the apple filling and 1 1/2 teaspoons of the reserved juice onto half of the rectangles. Top with the remaining rectangles and seal edges by pinching with a fork. Prick the tops with a fork to allow steam to escape.
  7. Bake: Place assembled pop tarts onto the prepared baking sheet and bake for 23-25 minutes, or until golden brown.
  8. Make the glaze: In a small bowl, whisk together 3/4 cup sifted powdered sugar, 2 tablespoons reserved apple juice, 2 teaspoons lemon juice, and 2 teaspoons milk until smooth.
  9. Glaze and serve: When the pop tarts are warm but not hot, drizzle the glaze over the top. Allow glaze to set slightly before serving.
