- Preheat Oven and Griddle Pan: Preheat your oven to 200°C (180°C fan) or gas mark 6. Place an ovenproof griddle pan over high heat on the stovetop to get it hot enough to sear the steak properly.
- Season and Rub Steak: Season the T-bone steak generously on both sides with salt and pepper. Rub both sides of the steak with the bashed garlic cloves, thyme leaves, and olive oil to infuse flavor before cooking.
- Griddle the First Side: Place the steak in the hot griddle pan and sear the underside for 2 minutes or until distinct griddle lines form. This initial char locks in juices and develops flavor.
- Flip and Add Herbs: Turn the steak over to brown the other side, apply more thyme by rubbing it on top, and lay the thyme sprigs and garlic cloves onto the top of the steak while it cooks.
- Render Fatty Side: Once both sides have griddle lines and are evenly browned, remove the thyme and garlic from the top. Using tongs, hold the steak upright to cook the fatty edge, rendering it soft and flavorful instead of gristly. This will take a few minutes.
- Add Butter and Finish in Oven: Lay the steak flat again, place the reserved thyme and garlic back on top along with the butter. Transfer the entire pan to the preheated oven to finish cooking for 4-5 minutes until the internal temperature reaches 62-65°C (medium-rare to medium), or to your preferred doneness.
- Rest the Steak: Remove the steak from the oven and let it rest on a board or large plate for 5-6 minutes. Resting allows the juices to redistribute, ensuring a tender and juicy steak.
- Serve and Enjoy: Serve the T-bone steak on a board or large platter in the center of the table to share and enjoy.
