These Air Fryer Breakfast Burritos combine savory sausage, sautéed vegetables, and scrambled eggs wrapped in warm flour tortillas, then crisped to perfection in the air fryer. A quick and satisfying morning meal that’s easy to prepare and packed with flavor.

Breakfast Filling
- 3 large eggs
- 4 ounces sausage
- 2 tablespoons red onion, chopped
- 2 tablespoons serrano chili, chopped
- 2 tablespoons red bell pepper, chopped
- Salt, to taste
- Ground black pepper, to taste
Wrap & Finish
- 4 8-inch flour tortillas
- Nonstick cooking spray, as needed
Instructions
- Cook the Sausage: Heat a large skillet over medium-high heat, then add the sausage. Cook it for 6 to 8 minutes, stirring frequently, until fully browned and cooked through.
- Add Vegetables and Eggs: Add the chopped red onion, red bell pepper, and serrano chili to the skillet with the sausage. Continue cooking and stirring until the vegetables soften. Crack in the eggs and stir continuously until the eggs are fully cooked and incorporated with the sausage and vegetables, about 5 minutes. Season with salt and ground black pepper to taste.
- Warm the Tortillas: Meanwhile, warm each 8-inch flour tortilla in a large skillet or over the grates of a gas stove until soft and pliable to prevent cracking when rolling.
- Assemble the Burritos: Spoon about 1/4 cup of the egg and sausage mixture down the center of each warmed tortilla. Fold the top and bottom edges over the filling, then roll the tortilla tightly into a burrito shape. Lightly mist each burrito with nonstick cooking spray.
- Air Fry the Burritos: Place the assembled burritos in the basket of an air fryer. Air fry at 400°F (200°C) for 4 to 6 minutes until lightly browned. Flip each burrito over, mist with cooking spray again, and air fry an additional 2 to 4 minutes until golden and crispy on all sides.
Notes
- You can adjust the heat by reducing or eliminating the serrano chili if you prefer a milder burrito.
- For a vegetarian version, substitute sausage with plant-based sausage or omit it entirely.
- If you don’t have an air fryer, the burritos can be toasted in an oven or skillet until golden and crispy.
- Use fresh or frozen vegetables but chop them finely for even cooking.
- Serve with salsa, sour cream, or guacamole for extra flavor and toppings.
