Apple Filling

  • 3 apples
  • 1 tsp lemon juice
  • 1 ½ tsp cinnamon
  • 40g caster sugar

  • 1 egg or 3 tbsp milk, to glaze
  • icing sugar, to decorate (optional)

Instructions

  1. Prepare the Pastry: Line the base of your air fryer with foil. Cut the pastry sheet in half lengthways, then cut each half into three pieces, resulting in six pieces total. Score an edge of about 2cm around each piece carefully, ensuring not to cut all the way through. Place the pastry pieces in the fridge to chill while preparing the apple filling.
  2. Prepare the Apples: Core and quarter the apples, then thinly slice each quarter. Place the apple slices into a bowl, add the lemon juice, and toss to coat to prevent browning. Add the cinnamon and caster sugar, mixing well to ensure all slices are evenly coated with the spiced sugar mixture.
  3. Assemble the Tarts: Arrange the apple slices in the center of each pastry piece, making sure not to go beyond the scored border to allow the edges to puff up and create a rim around the filling. Refrigerate the assembled tarts for 20 minutes to help them set.
  4. Preheat the Air Fryer: Set your air fryer to 180°C (356°F) and allow it to reach the temperature before cooking the tarts.
  5. Cook the Tarts: Brush the edges of the pastry with beaten egg or milk to give a golden, glossy finish. Place the tarts carefully in the air fryer basket and cook for 25-30 minutes until the pastry is fully cooked, puffed, and golden brown, and the apple slices have softened and turned light golden.
  6. Finish and Serve: Remove the tarts from the air fryer and let them cool slightly. Optionally, dust with icing sugar for extra sweetness and presentation before serving warm or at room temperature.

  • Use firm apples such as Granny Smith or Bramley for the best texture after cooking.
  • Scoring the pastry edges helps the border puff up to hold the filling nicely.
