Coating & Seasoning

  • 1 tbsp sunflower or olive oil
  • 1 tbsp plain flour
  • Seasoning of choice: salt and pepper, or ½-1 tsp of smoky BBQ, ras-el-hanout, garlic granules, celery salt, or garam masala

Instructions

  1. Coat the chicken in oil: Toss the chicken thighs in the sunflower or olive oil until each piece is thoroughly coated to help the flour and seasoning stick.
  2. Mix flour and seasoning: Combine the plain flour with your chosen seasoning. Toss the oiled chicken thighs in this mixture to achieve a very light coating. If you prefer a thicker coating, double the amount of flour and seasoning.
  3. Arrange and air fry: Place the coated chicken thighs in a single layer on the air fryer tray, ensuring there is no overlap for even cooking. Program the air fryer to cook for 35 minutes.
  4. Check doneness: After 35 minutes, check one thigh by pulling the flesh away from the bone; it should come away easily with no pink remaining. If not fully cooked, continue air frying for an additional 5-10 minutes.
  5. Rest briefly and serve: Once cooked, the chicken skin should be crisp and bubbled. Remove from the air fryer immediately to prevent the skin from softening due to steam. Discard any fat collected in the base of the fryer before serving.
